What I love about these cookies is they are super healthy, taste like carrot cake ( almost) and are perfect for on the go breakfast. Make a batch over the weekend and have them handy for mornings when you have no time for breakfast or as an afternoon snack when you reach out for cookies or chips. They are loaded with heart healthy oats, flax, cinnamon and walnuts not to mention easy to put together, so there is no reason not to make them.
